| Life Stage | 5th–6th Instar Larvae (Pre-Pupae) | Harvested at peak protein accumulation stage for maximum nutritional yield |
| Size Range | Particle Size: 100–300 µm | Fine-milled powder grade suitable for homogeneous blending in protein bar matrices |
| Moisture Content | ≤ 5% | Low moisture ensures microbial stability and extended shelf life in finished bars |
| Protein Content | ≥ 60% (dry weight basis) | Crude protein measured by Kjeldahl method (N × 6.25); rich in essential amino acids including lysine and methionine |
| Fat Content | 10–15% (dry weight basis) | Predominantly lauric acid (C12:0); partially defatted options available at ≤ 8% for low-fat bar formulations |
| Ash Content | ≤ 8% | Mineral-rich fraction including calcium, phosphorus, and zinc; within food-grade acceptable limits |
| Survival Rate | N/A (Processed Ingredient) | Not applicable; product is fully processed dried protein powder, not live insects |
| Rearing Conditions | Temperature: 26–30°C; Humidity: 60–70% RH | Controlled indoor rearing environment ensuring biosecurity and consistent larval quality |
| Feed Source | Certified Organic Pre-Consumer Food Waste / Grain By-Products | Substrate complies with EU Regulation 2017/893 and equivalent food safety standards for insect rearing |

Our first 150 kg batch tested at 7.6% chitin, toward the upper end of the stated 2–8% range, which raised digestibility concerns for our sports bar application. I raised this with the technical team, who explained the batch was from an earlier harvest stage and offered a reprocessed lot with chitin reduced to 3.1% at no additional cost. The replacement batch arrived within 9 days and passed our internal AOAC 991.43 fibre panel. Protein content on the adjusted batch was 61%. Issue was handled professionally and the product now meets our formulation requirements. Cautiously optimistic for future orders.
